Ingredients:
- 500 g Baby Potatoes (boiled and peeled)
- 2 inch Ginger (chopped)
- 4 Tomatoes (chopped)
- 4 tbsp Mustard Oil
- 2 Green Cardamoms
- 2 Dry Red Chilies
- 2 Bay Leaves
- 1 tsp Coriander Powder
- 1 tsp Turmeric Powder
- ½ tsp Cumin Powder
- A pinch of Asafoetida
- Salt (to taste)
How to make Aaloor Dam:
- Heat oil in a pan for 2 minutes. Fry the potatoes for a minute and keep aside.
- In the same oil, mix all the spices and sauté for 2 minutes.
- Add tomatoes and fried potatoes. Stir and fry for 4 minutes on low flame.
Suggestions:
Serve hot with puris or chapatti.
