Ingredients:
- ½ Kg Vankaya/Brinjal
- ½ cup Fresh Grated Coconut
- 1 Onion (sliced)
- ½ tsp Turmeric Powder
- 1 tsp Coriander powder
- 4 -5 Garlic
- 1 ½ Red Chilli Powder
- Salt to taste
- 1 tsp Mustard Seeds
- 8-9 Curry Leaves
- 1 tsp Cumin Seeds (Jeera)
- 2 tsp Channa Dal
- 2 tsp Urad dal
- 1 tsp Sesame Seeds(nuvvulu)
- 4 tsp Roasted Peanut Powder
- Corriander leaves
How to make Andhra Vankaya:
- Heat pan on a medium flame and add oil to it.
- Add mustard seeds, cumin seeds, channa dal, urad dal, garlic and sesame seeds, and deep fry it for about 2 mins.
- Add the sliced onions and fry it till it turns light brown. Add the curry leaves.
- Add Brinjal, with some salt and turmeric and close it with a lid .
- Cook the brinjal till it becomes soft. Once softened add chilly powder, coriander Powder, coconut Powder, roasted peanut powder(pallilu/groundnuts)and deep fry them, till it turns crispy.
- Garnish it with coriander leaves.
Suggestions:
Serve hot with rice with a combination of pappu charu.
