Ingredients:
- 3 small Zucchini (Tori)(diced)
- 2 large Tomatoes (chopped)
- 2 fresh Yellow Hot Peppers (chopped)
- 1 Onion (thinly sliced)
- 1 clove Garlic (chopped)
- 1 tbsp Olive Oil
- 1 can whole Kernel Corn (drained)
- ½ lb Monterey Jack Cheese (cut into chunks)
- 1 tbsp fresh Cilantro (Hara Dhania)(minced)
- Salt and Black Pepper to taste
How to make Calabacitas:
- Heat the oil in a saucepan.
- Place zucchini, tomatoes, peppers, onion and garlic into the saucepan.
- Cook on low heat until all ingredients are hot and onion is translucent.
- Add corn and cheese. Cover the pan and continue to heat until cheese is melted.
- Sprinkle with cilantro, salt and pepper.
- Serve hot.
