Ingredients:
- 3 cups Water
- 2 tbsp Sugar
- ½ cup Pork
- ½ Lime
- 3-4 Kaffir Lime Leaves
- 4 tbsp Fish Sauce
- 1 tbsp red Curry Paste
- 1 cup Coconut Milk
- ½ lb Chinese Water Apinach (cut)
How to make Chinese Water Spinach Curry:
- Cut the pork into half inch cubes.
- Also cut the Chinese water spinach into inch long pieces.
- Heat a skillet and add coconut milk and curry paste.
- When the mixture starts sizzling add the pork and spinach.
- Stir to mix properly.
- Add more coconut milk and water and set it to simmer.
- Add fish sauce and sugar.
- Now squeeze the lime juice and add the kaffir lime leaves.
- Stir thoroughly and simmer for half an hour.
- Serve hot.
