Ingredients:
  • 2 lbs Collard greens, tough stems discarded, leaves chopped
  • 1 Large garlic clove, minced
  • 2 tbsp Medium onion, chopped
  • 2 tbsp Olive oil
  • 2 tbsp Dark sesame oil
  • 2 tsp Bacon fat
  • A pinch chili pepper flakes
  • A couple pinches salt
  • A couple pinches sugar
How to make Collard Greens:
  • Melt bacon fat and heat olive oil on a large skillet (with a tight fitting cover) over medium heat.
  • Fry onion till transparent.
  • Now add garlic and saute till fragrant for 20 seconds.
  • Add the greens, sesame oil, chili pepper flakes, salt, and sugar.
  • Cover it and cook till tender, for about 8-10 minutes.
