Ingredients:
- 1 cup Butter (softened)
- ½ cup White Sugar
- 1 Egg
- 1 tsp Almond Extract
- 3 cups All-Purpose Flour
- ¼ tsp Salt
- 3 Eggs (beaten)
- ½ cup White Sugar
- 1½ cups Almonds (finely chopped)
How to make Finnish Cookie Sticks:
- Preheat oven to 350 °F (175 °C).
- Combine butter and ½ cup white sugar in a medium bowl. Mix well until the mixture turns smooth.
- Add 1 egg and almond extract. Stir.
- Mix together salt and flour.
- Add the flour mixture to the sugar mixture. Mix with your hands to form smooth dough.
- Roll the dough into logs about ½ inch thick and 2 to 3 inches long.
- Dip each log into the beaten eggs and then into the remaining ½ cup white sugar.
- Finally, roll the logs into almonds and place them onto ungreased cookie sheets.
- Bake the logs for 8 to 10 minutes.
- Remove and cool the cookies on the baking sheets for 5 minutes.
- Remove them from the sheets and transfer to wire racks. Cool them completely.
