- 2 large Pomfrets (ach cut into 5 slices)
- Salt to taste
- 5 large very soft Banana Leaves
- ½ cup Vinegar
- ½ cup Oil)
For The Chutney:
- 1 Coconut (grated)
- 2 cups Coriander (chopped)
- 1 tbsp Mint (chopped)
- 1" piece Ginger
- 20 Garlic Cloves
- 6 Green Chillies (deseeded)
- 10 Peppercorns
- 1 tbsp Cumin Seeds
- 2 Limes (juice)
- 2 tbsp Sugar
How to make Fish in Banana Leaves:
- Slice each fish into 5 pieces and mix it with salt.
- Take all the ingredients of chutney and grind it adding ½ cup water to it.
- Dip each slice of fish in ground chutney.
- Take out the center stalk of banana leaves and pack the fish slices in each banana leaf binding it with thin cord.
- Oil an aluminum pan and transfer the packed fishes to it. Cook it on medium flame for 3 min. Then turn over the fish and pour over vinegar with water. Cook it covered for another 15 min on low flame. Continue turning over the fish.
- Serve it hot.
