Ingredients:
- 1 cup Green Lentil
- 1 Green Pepper
- 3 Green Onions
- 1/3 bunch Parsley
- 1/2 tsp Red Pepper
- 3/4 Mint fresh
- 4 tbsp Olive Oil
- 2 cup Water
- 3 tbsp Lemon Juice
- Salt to taste
How to make Green Lentil Salad:
- Soak lentils overnight in water.
- Cook them for 25-30 minutes or until it become soft.
- Cut thin slices of onions, pepper rings, mint leaves, and minced parsley. Mix them well and combine it with lentils.
- Add salt and red pepper. Mix olive oil and lemon juice together.
- Arrange lentils in a dish and sprinkle dressing over.
- Serve cold.
Suggestions:
Serve it wit roti or nan.
