Ingredients:
- 30 gm blanched and chopped Almonds
- 30 gm chopped Cashew Nuts
- 250 gm Pure Ghee
- 50 gm Flour
- 50 gm Semolina (sifted)
- 50 gm Whole Wheat Flour
- 3/4 cup Milk
- 250 gm Sugar
- 1/2 cup Water
- 2 beaten Eggs
- 1 tsp Vanilla Essence
- 12 Cardamoms
- ½ Nutmeg (powdered)
- 30 gm Crystallized Cherries
- 30 gm Orange Peel (chopped)
How to make Malido:
- Heat half of the ghee in a frying pan and sauté the almonds along with cashew nuts. Drain and keep separately.
- Combine the flour, wheat flour and semolina with the remaining ghee and milk and fry on low heat until the mixture becomes thick and golden. Let it cool on room temperature.
- Make syrup of the sugar and water and mix in the fried flour mixture. Stir unless it does not leave the pot. Remove from the fire and pour the beaten eggs gradually and mix thoroughly. Cook on low heat and stir constantly until the ghee floats on the top. Remove from the fire and add the vanilla essence, cardamoms, and nutmeg, half of the fried almonds and cashew nuts, half of the cherries and orange peel and mix them well.
- Garnish with the remaining ingredients.
