Ingredients:
- 4 pound boneless rolled Pork Loin Roast
- 1/2 cup Soy Sauce
- 1/2 cup cooking Sherry
- 2 cloves Garlic (minced)
- 1 tbsp dried Mustard
- 1 tsp ground Ginger
- 1 tsp dried Thyme
- 10 oz Currant Jelly
- 2 tbsp Cooking Sherry
- 1 tbsp Soy Sauce
How to make Marinated Pork Roast With Currant Sauce:
- Take the soy sauce, sherry, garlic, mustard, ginger and thyme in a bowl and mix. Place the mixture in a resealable plastic bag.
- Take the roast into the bag and seal. Refrigerate for 3 hours.
- Place the roast in a roasting pan along with the marinade. Bake at 165 degrees C for 3 hours with occasional basting with the marinade.
- In a saucepan melt the currant jelly over low heat. Add one tablespoon of soy sauce and two tablespoons of sherry.
- Serve the roast with the currant sauce.
