Ingredients:
  • 4 pound boneless rolled Pork Loin Roast
  • 1/2 cup Soy Sauce
  • 1/2 cup cooking Sherry
  • 2 cloves Garlic (minced)
  • 1 tbsp dried Mustard
  • 1 tsp ground Ginger
  • 1 tsp dried Thyme
  • 10 oz Currant Jelly
  • 2 tbsp Cooking Sherry
  • 1 tbsp Soy Sauce
How to make Marinated Pork Roast With Currant Sauce:
  • Take the soy sauce, sherry, garlic, mustard, ginger and thyme in a bowl and mix. Place the mixture in a resealable plastic bag.
  • Take the roast into the bag and seal. Refrigerate for 3 hours.
  • Place the roast in a roasting pan along with the marinade. Bake at 165 degrees C for 3 hours with occasional basting with the marinade.
  • In a saucepan melt the currant jelly over low heat. Add one tablespoon of soy sauce and two tablespoons of sherry.
  • Serve the roast with the currant sauce.
