Ingredients:
- 1 Carrot (grated)
- 1 tbsp Paprika
- ½ tbsp Dried Mango
- ½ tbsp Dried Cherries
- ½ tbsp Dried Papaya
- ½ tbsp Dried Pineapples
- ½ tbsp Dried Prunes
- ½ tbsp Dried Cranberries
- ½ tbsp Dried Blueberries
- ½ tbsp Dried Figs
- ½ tbsp Dried Raisins
- ½ tbsp Garlic (chopped)
- ½ tbsp Sugar
- ½ cup plus 1 tbsp White Vinegar
- 1/4 tsp Turmeric Powder
- 1/2 tsp Mughlai Garam Masala
- 2-3 strands Saffron
- A pinch Cardamom Powder
- A pinch Nutmeg Powder
- Salt to taste
How to make Mewa Nu Achar :
- Soak the dry fruits overnight in vinegar
- Combine the carrot with 1 tbsp vinegar, sugar and garlic and put on heat until the carrot softens.
- Mix in the soaked dry fruits followed by vinegar, salt, paprika, turmeric powder, mughlai garam masala, cardamom powder, nutmeg powder and saffron.
- Stir the ingredients well until the gravy becomes thick and no liquid remains.
- Remove from the heat and let it cool on room temperature. Put in an air-tight jar and refrigerate.
