Ingredients:
  • Crust
  • 2 cups Flour
  • 1 tsp Baking Powder
  • 1 tsp Salt
  • ¾ cup Butter (softened)
  • ¾ cup Sugar

    Filling
  • ½ cup instant Potato Flakes
  • 8 ounces Almond Paste
  • 1¼ cups Confectioners' Sugar
  • ½ cup Water
  • 1 Egg
  • 1 tsp Cinnamon
  • ½ tsp Cardamom
How to make Norwegian Almond Bars:
  • Mix together flour, baking powder, salt, butter and sugar to form the crust of the cookies.
  • Blend the ingredients using an electric mixer till fine particles are formed.
  • Press half the mixture into an ungreased 13x9 inch baking pan.
  • Combine potato flakes, almond paste, confectioners’ sugar, water, egg, cinnamon and cardamom together.
  • Spread the filling over the crust.
  • Sprinkle the remaining half crust mixture over the filling.
  • Bake the mixture at 375 °F for 25 to 30 minutes.
  • Remove and cool the mixture.
  • Cut into bars and serve.
