Ingredients:
  • 1 quart Kvas (Russian Beverage)
  • 2 Cucumbers
  • 7 oz Spring Onions
  • 4 hard boiled Eggs
  • 10 oz boiled Beef
  • 4 oz lean Ham
  • 2 boiled Potatoes
  • Salt (to taste)
  • Parsley (finely chopped)
  • 2 tbsp Sour Cream
How to make Okroshka:
  • Slice or chop cucumbers, onions, eggs, beef, ham, and potatoes.
  • Add them to kvas and squeeze a slice of lemon.
  • Sprinkle salt and toss well.
  • Refrigerate for 2 hours.
  • Garnish with parsley and sour cream. Serve chilled.
