Ingredients:
- 3 tbsp Olive Oil
- 450 gm ripe Tomatoes (peeled and chopped)
- 1 teaspoon Oregano
- Thyme or Basil
- Salt and Black Pepper
- Pinch of Sugar
- 4 Eggs (beaten a little)
How to make Omelet with Fresh Tomatoes:
- Heat the oil in a pan and add the tomatoes and basil or thymes and oregano.
- Stir and allow simmering for a few minutes until no liquid is left.
- Add salt, pepper, sugar and the beaten eggs all over the cooked material and stir slowly until eggs are cooked but not become hard.
- Remove from the pan and serve hot.
