Ingredients:
- ½ kg Field Beans
- ½ kg Onions (chopped)
- ¼ kg small Eggplants
- ¼ kg small Potatoes
- ¼ kg Tomatoes
- ¼ kg sweet Potatoes (cut into ½ inch pieces)
- 4 pods Garlic (whole)
- 1 bunch Coriander (chopped)
- 4-5 green Chilies (chopped)
- 1 sp Ginger-Garlic Paste
- 1 sp Chili Powder
- 1 sp Turmeric Powder
- 1 tsp Dhania - Jeera Powder
- 1 tsp Curry Powder
- 1 tsp Sambhar
- 1 tsp Black Pepper
- 1 spoon Ajwain
- 1 spoon Salt
- 2 tbsp Oil
How to make Papri Vegetarian:
- Rinse all the vegetables and drain.
- Heat oil in pan and fry half of the chopped onions until golden brown.
- Add the vegetables except small brinjals and all the spices except ajwain and the remaining onions into the pan.
- Cover and put into medium oven at 350 degrees F for 45 minutes.
- After 45 minutes, put the small brinjals and ajwain into the oven and cook for 15 minutes.
- Remove from the oven and serve.
