Serves 24
Ingredients:
  • 4 Eggs
  • ½ cup Cream
  • 4 tbsp Confectioner’s Sugar
  • 1 tsp Cinnamon (grounded)
  • 795 g Potatoes (peeled & grated)
  • 2 tbsp Raisins (soaked)
  • 1 cup Flour
  • Salt (to taste)
  • 1 cup Oil
  • Confectioner’s Sugar & Cinnamon Powder (combined, for garnishing)
How to make Polish Cookies:
  • Separate the egg yolks and whites.
  • Combine egg yolks with 3 tbsp cream, sugar, and cinnamon in a large mixing bowl. Whip until soft and smooth.
  • Add grated potatoes and raisins. Mix well.
  • Beat egg whites with salt in a separate bowl until firm. Stir in the potato mixture.
  • Finally add flour and blend well to make a smooth batter.
  • Heat oil in a pan and pour spoonfuls of the mixture. Fry them on both sides until deep brown.
  • Remove and absorb excess oil on tissue papers.
  • Sprinkle confectioner’s sugar & cinnamon powder on the fried cookies.
