Ingredients:
- 8 oz baby Zucchini (trimmed)
- 8 baby Turnips (peeled & halved)
- 3 tbsp Olive Oil
- 2 tbsp fresh Italian Parsley (chopped)
- 20 baby Carrots (peeled trimmed)
- 8 oz baby Pattypan Squash (halved)
- 8 baby Golden Beets (peeled & halved)
- Salt to taste
- Pepper to taste
How to make Roasted Baby Vegetables:
- Preheat oven to 400°F.
- Take a large bowl and add all vegetables (except zucchini).
- Now, spread out the mixed veggie content on a large rimmed baking sheet. Add the oil as well, leaving a tsp of it for later use.
- Sprinkle salt and pepper on vegetables.
- Roast for about 15 minutes.
- Mix zucchini to reserved bowl and sprinkle salt and pepper along with the remaining 1 tsp oil.
- Mix zucchini to baking sheet with vegetables. Roast all vegetables again and stir occasionally for about 15 minutes. Garnish it with parsley and serve hot.
