Ingredients:
  • 1 cup Onions (Chopped)
  • 2 cups fresh Mushrooms (Sliced)
  • 2 tsp Olive Oil
  • 3 cups Water
  • 8 oz cans Tomato Sauce
  • 1 cup dry Lentils
  • 1 small Zucchini (Chopped)
  • 3 cloves Garlic (Minced)
  • ½ cup Water
  • ½ tsp White Sugar
  • 6 oz can Tomato Paste
How to make Sicilian Lentil Pasta Sauce:
  • Heat up oil in a large saucepan and add onions, mushrooms, zucchini and garlic to it. Cook and stir for 5 min.
  • Add lentils and 3 cups of water to vegetables and bring them to rolling boil, while stirring occasionally. Reduce the heat, cover it and cook for 45-60 min.
  • After 40-60 min stir in tomato sauce, tomato paste, sugar and ½ cup water. Bring it to boil again. Reduce the heat, cover and simmer for 20 min.
  • Add more water if necessary to keep the sauce from sticking. Make sure not to dilute the sauce, it should be thick.
