Ingredients:
- 2 cups Onions (chopped)
- 8 cloves Garlic
- 1/2 cup Ghee/Vegetable Oil
- 2 tbsp Coriander Powder
- 2 tbsp Cumin Powder
- 1/2 tbsp Turmeric powder
- 1/2 tbsp Paprika
- 1/2 tbsp Fenugreek Powder
- 1/2 tbsp Ginger Powder
- 1 tsp Cayenne Pepper
- 1/2 cup Water
- 3 Cups Tomatoes (chopped)
- 1/2 tsp Dried Mango Powder
How to make Tomato Masala:
- In a mixer, grind the onions and garlic to form a smooth paste.
- Now, heat ghee over medium flame in a heavy pot and add the onion-garlic paste. Sauté till the oil separates and moisture has left.
- To this, add coriander powder, cumin powder, turmeric powder, paprika, fenugreek powder, ginger powder and cayenne pepper. Fry for about 3 minutes taking care not to burn it.
- Now, add the water to it and cook on medium heat till all the moisture is gone. At this stage the paste will look oily.
- Add tomatoes now and continue frying till all moisture is gone. Sprinkle dried mango powder in it.
- Tomato masala is ready to be served.
