Ingredients:
- 16 oz Jar Sauerkraut (Drained)
- 1 lb Smoked Cheddar Cheese (Shredded)
- 2 Tomatoes (Sliced)
- 2 tbsp Butter
- 12 slices Dark Rye Bread
- 1 cup thousand Island Salad Dressing
How to make Vegetarian Reubens:
- Take a large bowl and stir together cheese and sauerkraut. Add enough dressing to coat and mix it properly.
- Apply butter to each slice of bread on one side. Spread the layer of cheese mixture onto the unbuttered side of half of the bread slices. Top the bread with sliced tomato and another slice of bread.
- Heat a large skillet to medium-high heat. Fry the sandwiches on both sides until the outside is toasted and the cheese is melted.
