Ingredients:
  • 400 g Ricotta Cheese (well drained and dry)
  • 125 g soft Butter
  • 100 g Sugar
  • ½ tsp Vanilla Essence
  • ½ tsp Salt
  • 3 Eggs (beaten)
  • 2 tbsp Semolina
  • Juice and zest of 1 Lemon
  • ½ tsp Cinnamon
How to make Zapekanka:
  • Combine butter, sugar, and eggs together in a large bowl. Beat until sugar has melted and you get a fluffy mixture.
  • Add salt, vanilla, and cheese. Mix well.
  • Add semolina, lemon juice, and cinnamon. Stir to integrate all the ingredients.
  • Pour the mixture a in buttered baking pot and pour a thin layer of water on top.
  • Bake at 200 degrees C for 35 minutes.
  • Cool to room temperature and garnish with lemon zest.
  • Serve.
