Collard Greens

Ingredients:
- 2 lbs Collard greens, tough stems discarded, leaves chopped
- 1 Large garlic clove, minced
- 2 tbsp Medium onion, chopped
- 2 tbsp Olive oil
- 2 tbsp Dark sesame oil
- 2 tsp Bacon fat
- A pinch chili pepper flakes
- A couple pinches salt
- A couple pinches sugar
Cooking Instructions:
- Melt bacon fat and heat olive oil on a large skillet (with a tight fitting cover) over medium heat.
- Fry onion till transparent.
- Now add garlic and saute till fragrant for 20 seconds.
- Add the greens, sesame oil, chili pepper flakes, salt, and sugar.
- Cover it and cook till tender, for about 8-10 minutes.
