Corn Paneer

Ingredients:
- 1 cup Paneer, cubed
- 1 cup Sweet Corn, boiled
- 1/2 cup Onion Puree
- 1 Bay Leaf
- 1 Cinnamon Stick
- 2 Cloves
- 1 tsp Chili Powder
- 4 Tomatoes, pureed
- 1/2 cup Curds, beaten
- 2 tbsp Cream
- 1 tsp Sugar
- 1/2 tsp Garam Masala
- 2 tbsp Oil
- Salt to taste
- Broken Cashews
- 1 tbsp Poppy Seed
- 2 Garlic Cloves
- 1/2 inch piece Ginger
- 3 tbsp Warm Milk
Cooking Instructions:
- Soak cashew nuts and poppy seeds in warm milk for about 25 minutes. Thereafter, add garlic and ginger and grind to make a smooth paste.
- In a pan, heat the oil and add onions, bay leaf, cinnamon and cloves. Sauté till the onions turn golden brown.
- Now, add chili powder, ground paste and tomatoes. Simmer the mixture for about 3 to 4 minutes.
- Next, pour the curd and cream and add sugar, garam masala and salt. Simmer until the gravy thickens and oil separates from it.
- In case the gravy is too thick, add some water.
- Now, add paneer and corn in the mixture and mix well.
- Garnish it with coriander leaves. The yummy corn paneer delight is ready to be gorged upon!!
