Fruit Rice Salad

Ingredients:
- 450 gms Cooked Rice
- 1/2 Bunch Spring Onions
- 225 gms Broccoli florets blanched in salty water
- 2 tbsp Olive Oil
- 100 gms Mushrooms
- 50 gms Raisins
- 50g Sultanas
- 2 tbsp White Wine Vinegar
- 2 tbsp Dijon Mustard
- 25 gms Chopped Parsley
- Salt and Black Pepper to taste
Cooking Instructions:
- Whisk vinegar, olive oil and mustard in a large bowl.
- Add rest of the ingredients except pepper and salt.
- Toss to form a coat of dressing.
- Now mix salt and pepper.
- Fruity Rice Salad is ready.
