Fig Jam

Ingredients:
- 2.2 kg Fresh Figs
- 3/4 cup Water
- 7 cups Sugar
- 1/4 cup Lemon Juice
- 1 small packet Pectin
Cooking Instructions:
- First wash the figs under running water. Then cut off the stems and the bottom of the figs.
- Heat water into a pot and bring it to a boil.
- Pour the boiling water over figs and leave it for 10 minutes.
- Drain the water and chop the figs.
- Now mix a little pectin with about 1/4 cup of sugar.
- Take a pot and add 3/4 cup water, sugar, rest of the pectin and figs. Heat it to boil, stir occasionally until sugar dissolves.
- Cook rapidly until thick. Stir frequently to avoid sticking.
- Add lemon juice and the earlier-made pectin-sugar mixture into the fig mixture and cook 1 minute longer.
- Pour the mixture into Ball Jars. Allow it to cool and then put it in the refrigerator.
