Ingredients:
- For The Dough
- 2 cup All Purpose Flour (maida)
- 4 tbsp Hot Melted Ghee
- ½ tsp Kalonji
- ¾ tsp Salt
For The Stuffing
- 4 tbsp Khus-Khus
- ¼ tsp Asafoetida
- 2 tsp Jeera
- 4 Big Red Kashmiri Chilies
- 4 Cardamoms
- 4 Cloves
- 2 stocks Cinnamon
- ½ tsp Kalonji
- ½ tsp Ground Ginger
- 2 tsp Ghee
- Salt to taste
- Ghee (for deep frying)
Cooking Instructions:
- For the dough
- Take a bowl and sieve the flour.
- Add ghee, kalonji and salt to make a stiff dough adding water as required. Knead properly.
For the stuffing
- Take a cup and soak khus khus in it to make a thick paste.
- Take a tawa and for 2 minutes, roast asafoetida, jeera, chillies, cardamoms, cloves and cinnamon.
- Now, make a powder of the roasted spices using a blender.
- In a small vessel, heat ghee and saute ginger and kalonji in it for about 30 seconds.
- Now, add khus- khus to this mixture and mix again.
- Remove from the flame put the powdered masala and salt and mix properly.
How to proceed
- Start with dividing the dough in 20 equal balls and then roll one ball.
- Put ½ tsp of filling in the center and envelope it. Roll again.
- Take a kadai and heat ghee in it. Deep fry the puri until it is golden brown. Repeat the procedure with the other dough balls.
- It is ready to be served with potato vegetable.
