Spinach and Potato Fry

Ingredients:
- 800 gms Red Spinach
- 200 gms Potatoes (peeled and diced)
- 90 gms Coconut (grated)
- Salt to taste
For Tempering
- 2 tbsp Coconut Oil
- 1 tsp Mustard Seeds
- 1 tsp Urad Dal (washed and dried)
- 1 Onion (sliced)
- 2 sprigs Curry Leaves
- 1-inch piece Ginger (julienned)
- 6 Green Chilies (julienned)
Cooking Instructions:
- Boil the potatoes in salt water.
- In a skillet, heat the oil and add mustard seeds.
- When the mustard seeds start to splutter, add the Urad dal and fry until golden brown.
- Add the onions and fry till translucent.
- Then add the ginger, green chilies, curry leaves and fry well.
- Add the spinach and cook till dry.
- Now, add the potatoes and then cook till the moisture evaporates.
- Finally, mix in the grated coconut and stir for a minute.
- Serve hot.
