Mussel Soup

Ingredients:
- 2.2 lbs Fresh Sea Mussels
- 3 Shallots (finely chopped)
- 3 cloves Garlic (crushed)
- 1/2 cup White Wine
- 1-1/2 cup Heavy Cream
- 1/4 gm Saffron (crushed)
- 1/2 tsp Curry Powder
- Fresh Herbs (finely chopped)
- 1.7 oz Butter
- Salt & Pepper
Cooking Instructions:
- Fry shallots, garlic, herbs and spices in butter, in a pan.
- Add mussels and white wine.
- Lid the pan and allow to steam for 4-5 minutes.
- Add cream and cook for another 3-4 minutes.
- Season with salt and pepper.
- Serve the mussel soup with bread and butter.
