Ingredients:
- 1 pink Grapefruit
- 1 Avocado, halved, pitted & peeled
- 2 tbsp Extra-virgin Olive oil
- 3 tbsp Grapefruit Juice
- 1 tsp Brown Sugar
- 1 tbsp minced Red Onion
- 2 tsp fresh Coriander Leaves, finely chopped
- Salt & Pepper, to taste
- 2 cups mixed Baby Greens (packed)
Cooking Instructions:
- Peel and white pith the grapefruit.
- Cut it into four slices.
- In a small bowl mix the olive oil, juice, sugar, onion, and coriander and sprinkle the salt and pepper.
- Use this dressing to toss the greens taken in a plate.
- Arrange the grapefruit slices and avocado and pour the remaining dressing over it.
