Stinky Beans and Shrimp

Ingredients:
- 1 tbsp Vegetable Oil
- 1 tbsp Red Curry Paste
- 1 tbsp Fish Sauce
- 1 packet Stinky Bean
- 1/2 cup Shrimp
- 2 tsp Sugar
Cooking Instructions:
- Peel and de-vein the shrimp. Wash and soak the stinky beans in enough water, especially if they are the frozen variety.
- In a wok or pan, add about a tablespoon of oil. Drop the curry paste in and try to break it up by stirring it around till it releases all its flavours and loses the raw taste and smell.
- Drain the stinky beans and add them to the pan. Coat the beans with curry paste evenly by stirring a little. Add shrimp and stir until the shrimp are almost cooked. Now, add the fish sauce and sugar. Stir again to mix in the fish sauce and sugar and turn off the heat.
- Serve hot with rice.
