Ingredients:
- 10 cups Cucumbers (finely chopped and unpeeled).
- 4 cups Red Bell Pepper (finely chopped).
- 3 cups Green Bell Pepper (finely chopped).
- 1 cup Celery (finely chopped).
- 1 cup Onion (finely chopped peeled).
- ½ cup Pickling Salt
- 3½ cups White Vinegar
- 2-1/3 cups granulated Sugar
- 4 tbsp Mustard Seeds
- 2 tbsp Celery Seeds
Cooking Instructions:
- Mix the chopped cucumbers, bell peppers, celery and onion in a steel bowl and sprinkle in salt. Mix thoroughly and set aside for 4 hours.
- Now rinse all the chopped vegetables with cold water and then squeeze dry.
- In a pot mix the vinegar, sugar, mustard seeds and celery seeds.
- Boil in medium heat and then add the cucumber mix.
- Simmer for 10 minutes in low heat.
- Set it to cool and fill into prepared jar.
