Ingredients:
- 7 Tomatoes (chopped)
- 10 fresh Basil leaves (chopped)
- 3/4 cup Green Onion (chopped)
- 2 Pie crusts (refrigerated)
- 1 cup Mozzarella cheese (grated)
- 1 cup Cheddar cheese (grated)
- 1/4 cup Parmesan cheese (freshly grated)
- 1 1/2 cups Mayonnaise
- 5 slices Bacon (cooked and crumbled)
- Salt to taste
- Pepper to taste
Cooking Instructions:
- Cut pie crusts into small circles using a glass.
- Place it in the muffin tin and dock the crust with fork several times.
- Bake at 350 degree oven for 10 minutes.
- Mix tomatoes, basil, bacon, onion, salt and pepper.
- Top the crust up with the mixture.
- Combine the cheeses and mayonnaise.
- Spread the mixture on top of the tomato mixture.
- Bake for 10-15 minutes or until the top is slightly browned.
