Ingredients:
- 1 cup Rice (cooked, cooled)
- 2 Eggs
- 2 tbsp Raisins
- 1/4 tsp Lemon Zest (grated)
- 2 tbsp Almonds (chopped)
- 3 tbsp All purposeFlour
- 4 tbsp Butter (unsalted)
- 1 tbsp Sugar (powdered)
Cooking Instructions:
- Take a small bowl, mix rice, eggs, almonds, lemon zest, raisins, and flour and blend them together well.
- Make eight small cakes of this mixture.
- Melt butter in a skillet over medium heat. Fry cakes for 2-3 minutes on each side.
- Take out on a serving plate and sprinkle powdered sugar before eating it.
Suggestions:
- Serve it with jam or jelly.
