Ingredients:
- 2 cups All-Purpose Flour
- 1½ cups Sugar
- 3 Eggs
- 1 cup Vegetable Oil
- 1 tsp Baking Soda
- ½ tsp Salt
- 1 tsp Allspice
- 2 tsp Cinnamon
- 1 tsp Nutmeg
- 1 cup Buttermilk
- 1 tsp Vanilla
- 1 cup pitted dried Plums (chopped)
- 1½ cups chopped Nuts (i.e., walnuts, pecans)
For the Sauce
- ½ cup Margarine (or butter)
- 1½ cups Sugar
- ½ tsp Baking Soda
- 2 tsp Vanilla
- ½ cup Buttermilk
Cooking Instructions:
- Grease and flour 9x13 inch baking pan or bundt pan.
- Preheat oven to 350 °F (175 °C).
- Take a large mixing bowl and mix together flour, sugar, eggs, vegetable oil, baking soda, salt, allspice, cinnamon, nutmeg, buttermilk, vanilla, plums and nuts. Beat with an electric mixer to combine the ingredients well.
- Pour the batter into the baking pan.
- Bake the cake for 1 hour.
- Meanwhile, place a saucepan on fire and combine together margarine, sugar, baking soda, vanilla and buttermilk.
- Boil the contents, stirring continuously till the sauce reaches a thick consistency, for about 2 minutes.
- Remove the cake from the oven and poke holes with a fork.
- Pour the hot sauce over the cake.
- Let the cake sit till the sauce is absorbed.
