Strawberry Rhubarb Lemonade

Ingredients:
- 3 1/2 cups Water
- 1/2 pound Rhubarb (trimmed & chopped)
- 3/4 cup Sugar
- 2 strips Lemon Zest
- 1/2 tsp Vanilla
- 2 cups Strawberries (sliced)
- 1 cup Lemon Juice (fresh)
Cooking Instructions:
- Boil water, rhubarb, sugar, 2 strips of zest and vanilla in a saucepan.
- Stir until sugar is dissolved and simmer it (covered) for 8 minutes approximately.
- Toss in one cup of sliced strawberries and again boil the mixture (covered) for 2 minutes approximately.
- Allow the mixture to cool; strain it.
- Add remaining cup of strawberries (sliced) and lemon juice.
- Pour the lemonade in stemmed glasses containing ice cubes.
- Garnish it with additional zest before serving.
