Ingredients:
- 1 lb./500 g Pumpkin (boiled and mashed)
- ½ cup dilute Tamarind Water
- ½ cup Jaggery (grated and dissolved)
- 1 Bay Leaf
- 1 tsp Mustard Seeds
- 1 tsp Lime Juice
- 1 tsp Raisins
- 1 cup Water
- 2 Dry Red Chilies (slit)
- 1 tsp Mustard Oil
- Salt to taste

Cooking Instructions:
- To the tamarind water add the pumpkin and mix well.
- Now heat the oil, add mustard seeds and fry till they start crackling.
- Add chilies and bay leaf.
- Stir for a minute and then add the raisins and stir for another minute.
- Add the pumpkin-tamarind mixture and stir-fry for a few minutes.
- Stir in the jaggery mixture and bring to the boil.
- Allow it to simmer for a couple of minutes and remove from heat.
- Add the lime juice and combine well.
- Remove the bay leaf before serving.
