Ingredients:
- 1 1/2 tsp dried Thyme
- 11/2 tsp Cumin (ground)
- 11/2 tsp dried Oregano
- 1 medium red Onion (finely chopped)
- 2 cup baby Spinach (chopped)
- 11/2 cup Chickpeas
- 3 tbsp extra-virgin Olive oil
- 5 cloves Garlic (minced)
- 1/2 cup vegetable Broth
- 1 tsp kosher Salt
- 1/2 tsp hot Paprika
- 1/2 cup golden Raisin
Cooking Instructions:
- In a pan, heat 1tbsp oil over medium heat. Add onion and garlic.
- Cook for 10 minutes until onion is tender.
- Stir in oregano, thyme, cumin, chickpeas, salt and paprika.
- Using a potato masher, mash the chickpeas.
- Cook for 3 more minutes.
- Stir in broth and raisins.
- Add the spinach. Mix well.
- Sprinkle the remaining oil while serving.
