Ingredients:
- Crust
- 2 cups Flour
- 1 tsp Baking Powder
- 1 tsp Salt
- ¾ cup Butter (softened)
- ¾ cup Sugar
Filling
- ½ cup instant Potato Flakes
- 8 ounces Almond Paste
- 1¼ cups Confectioners' Sugar
- ½ cup Water
- 1 Egg
- 1 tsp Cinnamon
- ½ tsp Cardamom
Cooking Instructions:
- Mix together flour, baking powder, salt, butter and sugar to form the crust of the cookies.
- Blend the ingredients using an electric mixer till fine particles are formed.
- Press half the mixture into an ungreased 13x9 inch baking pan.
- Combine potato flakes, almond paste, confectioners’ sugar, water, egg, cinnamon and cardamom together.
- Spread the filling over the crust.
- Sprinkle the remaining half crust mixture over the filling.
- Bake the mixture at 375 °F for 25 to 30 minutes.
- Remove and cool the mixture.
- Cut into bars and serve.
