Ingredients:
- 1 cup Onions (Chopped)
- 2 cups fresh Mushrooms (Sliced)
- 2 tsp Olive Oil
- 3 cups Water
- 8 oz cans Tomato Sauce
- 1 cup dry Lentils
- 1 small Zucchini (Chopped)
- 3 cloves Garlic (Minced)
- ½ cup Water
- ½ tsp White Sugar
- 6 oz can Tomato Paste
Cooking Instructions:
- Heat up oil in a large saucepan and add onions, mushrooms, zucchini and garlic to it. Cook and stir for 5 min.
- Add lentils and 3 cups of water to vegetables and bring them to rolling boil, while stirring occasionally. Reduce the heat, cover it and cook for 45-60 min.
- After 40-60 min stir in tomato sauce, tomato paste, sugar and ½ cup water. Bring it to boil again. Reduce the heat, cover and simmer for 20 min.
- Add more water if necessary to keep the sauce from sticking. Make sure not to dilute the sauce, it should be thick.
