Ingredients:
- 1 (16 oz) can Beets (drained and sliced)
- 1 Egg (lightly beaten)
- ½ cup Breadcrumbs (fine and dry)
- 2 tbsp unsalted Butter
- 1 tbsp Lemon Juice
- 1 tbsp fresh Parsley (chopped)
Cooking Instructions:
- Sprinkle half of the breadcrumbs on a paper towel.
- Dip the beets into beaten egg and place them on the breadcrumbs.
- Sprinkle the remaining crumbs over the beets.
- Melt butter in a skillet on medium-low flame.
- Add beet slices and sauté for 3 minutes on each side till they turn brown.
- Remove and transfer onto a serving platter.
- Sprinkle lemon juice and parsley.
- Serve hot.
