Red Bell Pepper Raita

Ingredients:
- 1/2 Red bell pepper, finely diced
- 6 Ounces plain yogurt
- 2 tbsp Fresh mint leaves, finely chopped
- 1 Cucumber, peeled and diced
- Salt and pepper to taste
Cooking Instructions:
- Put Salt and pepper, plain yogurt, fresh mint leaves, cucumber, red bell pepper in a bowl and stir to blend.
- Sprinkle with pepper and salt, to taste.
- Refrigerate and covered, for at least one hour.
- Serve.
