Ingredients:
- 200 gm Caster Sugar
- 3 Eggs
- 250 ml Lemon Juice
- 3 Lemons Rind (grated)
- 100 gm Unsalted Butter
Cooking Instructions:
- Whip eggs and sugar in a bowl until it gets smooth.
- Add lemon juice, grated rind, butter and cook in the oven until it gets very thick. Stir it after every 1 min.
- Keep the cooked lemon curd in the sterilized jars.
- Refrigerate it for 3 weeks.
