Ingredients:
- 2 medium Potatoes (peeled)
- 1 medium Onion (chopped)
- 10 Green Chilies (slit)
- 3 cm piece Ginger (chopped)
- Black Pepper (to taste)
- Salt (to taste)
- 1 cup Coconut Milk
- 1 stalk Curry Leaves
- 2 tbsp Oil
Cooking Instructions:
- Pour ¾ cup water in a pan.
- Add potatoes, onions, chilies, and ginger.
- Flavor with salt and pepper.
- Cook on medium heat until potatoes turn very soft.
- Add coconut milk and curry leaves. Cook for a minute.
- Heat oil in a pan and stir the vegetables gently.
- Serve hot.
