Ingredients:
- ½ cup Red Cowpeas
- 200 gm Ashgourd (peeled)
- 6 Green Chillies (slit)
- Salt to taste
- 2 stalk of Curry Leaves
- 1 cup Coconut Milk
- 2 ½ tsp Oil
Cooking Instructions:
- Soak the cowpeas in water all night.
- Drain it. Put cowpeas and ¾ cup water in a pressure cooker and cook for around 10-15 min.
- Boil ashgourd, green chillies, 1 stalk curry leave with salt to taste in a pan. Cook for 30 min on high flame.
- Crush the boiled ashgourd lightly in pan. Add cowpeas, coconut milk and cook for another 2 min.
- Add oil and curry leave to it. Stir well.
- Serve it hot.
