Ingredients:
- 1 kg Okra (Ladies fingers)
- ½ cup Vinegar
- 1 cup Olive Oil
- 2 tsp Parsley (chopped)
- 2 Onions (chopped)
- 1 can Tomatoes (pulped)
- 1 tsp Sugar
- Salt and Pepper to taste
Cooking Instructions:
- Cut the stems of okra and throw away. Rinse and drain. Place them on a dish. Sprinkle salt, pepper, vinegar.
- Keep them aside for 40 minutes.
- Heat oil in frying pan and fry the onions until brown in it. Add tomatoes, sugar, and parsley and cook until tomatoes are dissolved completely. Sprinkle pepper and salt over it and mix well.
- Add okra and water. Boil until okra is tender.
- Serve with steamed rice.
