Courgette Salad

Ingredients:
- 3 Small Courgettes (tender and fresh)
- Olive Oil
- Lemon juice or Vinegar
- Salt to taste
Cooking Instructions:
- Scrub the courgettes with a knife and cut their ends.
- Rinse and boil until just tender. Drain and cut into rings.
- Place them in a bowl and drizzle few drops of olive oil and lemon and toss to mix.
- Flavour with salt and serve cold or hot.
