Ingredients:
- 1 cup Lentils (Masoor)
- 1 Onion (coarsely chopped)
- 2 Onions (finely sliced)
- 4 cloves Garlic
- ½ inch piece of fresh Ginger Root
- 2 Dry Red Hot Pepper
- 1 tsp Cumin Seeds
- 1 Cardamom (shelled)
- 2 Cloves (pound roughly)
- 3 Black Peppercorns
- 1/2 tsp Dhansaak Masala or Sambhar Powder
- 1 tsp Sugar
- 1 tsp Salt
- 8 tbsp Vegetable Oil
- 1 lb Chicken or Lamb (cut into small pieces)
Cooking Instructions:
- Heat 4 tbsp of oil in a frying pan. Fry the meat pieces in it with salt until tender and light golden. Keep it separately.
- Cook lentils with 4 cups water, coarsely chopped onions and salt until water is absorbed and lentils are just tender not mushy. Keep aside.
- Heat the remaining oil and fry the sliced onions until golden. Reserve half of the onions and 2 tbsp oil. Add spices to fried onion in pan and cook 5 minutes. Now add the lentils and mix well, sprinkle the sugar and cover to simmer for 10 minutes. Transfer the lentils in a serving dish and mix the chicken pieces. Sprinkle the reserved onions and oil. Serve with steamed rice.
