Ingredients:
- 3 Eggs
- 1 tbsp Lemon Juice
- 1 Lemon Zest (grated)
- 1/3 cup Olive Oil
- 1 cup Honey
- 1 cup warm Black Coffee
- 3½ cups Flour
- 2½ tsp Baking Powder
- 1 tsp Baking Soda
- Salt (to taste)
- ¼ tsp Cream of Tartar
- 1 cup Sugar
- 1 tsp Cinnamon
- ½ cup slivered Almonds
Cooking Instructions:
- Preheat oven to 350 °F.
- Combine eggs, honey, olive oil, coffee, lemon juice, and lemon zest in a mixing bowl. Beat well.
- Stir in flour, cream of tartar, sugar, cinnamon, baking powder and baking soda. Mix until well mixed.
- Gently fold in slivered almonds.
- Grease a baking pan with butter and little flour.
- Pour the batter in the baking pan and bake for around 50 minutes until a toothpick inserted comes out clean.
