Ingredients:
- 1.36 kg Beef (grounded)
- 455 g Pork (grounded)
- 115 g Kidney Fat (chopped)
- 1 cup Bread Crumbs
- 1 Onion (chopped)
- 2 Egg Yolks
- 115 g Salt Pork (chopped)
- 3 tbsp Butter
- 1 tbsp Flour
- ½ cup Cream
- Salt and Pepper (to taste)
Cooking Instructions:
- Heat butter in a pan and fry onions until translucent.
- Mix together beef, pork, kidney fat, salt pork, bread crumbs, fried onions, and egg yolks in a bowl.
- Flavor with salt and pepper. Mix into a loaf and smear with butter.
- Set the oven at 350 °F and bake the loaf for 45 minutes.
- Spread cream and sprinkle flour. Bake for another 15 minutes.
