Ingredients:
- 4 Eggs
- ½ cup Cream
- 4 tbsp Confectioner’s Sugar
- 1 tsp Cinnamon (grounded)
- 795 g Potatoes (peeled & grated)
- 2 tbsp Raisins (soaked)
- 1 cup Flour
- Salt (to taste)
- 1 cup Oil
- Confectioner’s Sugar & Cinnamon Powder (combined, for garnishing)
Cooking Instructions:
- Separate the egg yolks and whites.
- Combine egg yolks with 3 tbsp cream, sugar, and cinnamon in a large mixing bowl. Whip until soft and smooth.
- Add grated potatoes and raisins. Mix well.
- Beat egg whites with salt in a separate bowl until firm. Stir in the potato mixture.
- Finally add flour and blend well to make a smooth batter.
- Heat oil in a pan and pour spoonfuls of the mixture. Fry them on both sides until deep brown.
- Remove and absorb excess oil on tissue papers.
- Sprinkle confectioner’s sugar & cinnamon powder on the fried cookies.
